Ingredients
- 5 lb turkey breast (pre-brined)
- Oil (grapeseed or peanut work well)
- Favorite Rub OR combination of Salt, Pepper and Old Bay
Directions
- Rinse turkey breast and pat dry
- Rub entire breast with oil
- Liberally season with favorite rub OR salt, pepper and Old Bay seasoning, patting the seasonings into the skin
- Light Po Man, using a full box of briquettes, and placing cooking grate at the highest level
- Allow to preheat for about 15 minutes
- Place turkey breast on cooking grate
- Place lid on Po Man, leaving a 1/4 to 1/2 inch gap
- After 30-35 minutes, flip turkey breast, and allow to cook for another approximately 30-35 minutes.
- Cook to an internal temperature of 165 degrees, which will take approximately 12-15 minutes per pound.
- Slice and enjoy!
