Meatloaf

Prep: 15 minutes | Cook: 1 hour | Servings: 6-8

Ingredients

  • 2 pounds of ground venison or lean ground beef
  • 1/2 cup panko bread crumbs
  • 1 small yellow onion, finely chopped or grated
  • 2 cloves minced garlic
  • 2 eggs
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons yellow mustard
  • 2 Tablespoons of steak rub
  • 1/4 cup milk
  • 1/4 cup barbecue sauce

Directions

  1. In a large bowl combine all ingredients except barbecue sauce and gently mix. 
  2. Shape into a loaf with your hands and transfer onto a sheet of heavy duty aluminum foil, sprayed with no stick cooking spray. 
  3. Pour barbecue sauce over meatloaf.
  4. Light Po Man and allow to preheat for 5 minutes with cooking grate positioned at the top level.
  5. Place foil with meatloaf onto cooking grate and add lid, allowing a 1/4 inch gap.
  6. Cook for 55-65 minutes, to an internal temperature of 165 degrees.
