Ingredients
- 3 lb chuck roast
- 1 1/2 tsp kosher salt
- Texas Best Brisket Rub by Heaven Made Products
- Worcestershire Sauce (to coat)
- Beef Broth for spritzing
Directions
- Sprinkle chuck roast with 1 1/2 tsp of kosher salt and allow to sit overnight in fridge
- Fire up Po Man Grill with full box of coals and grill grate close to the top
- Cover chuck roast with Worcestershire sauce and liberally cover with brisket rub
- Place chuck roast on grill grate and put the lid on Po Man with a very small gap
- After 1 hour, spritz chuck roast with beef broth
- Once roast is at 165 degrees (approximately 1 1/2 hours into the cook), wrap tightly in butcher paper and return to grill until internal temperature is 205 degrees (approximately another 1-2 hours).
