Jalapeno Poppers

Ingredients

  • 6 jalapenos
  • 2 ounces of cream cheese (softened)
  • 6 ounces of Pawley’s Island Pimento Cheese
  • 6-8 slices of bacon
  • Optional: favorite grilling rub

 

Directions:

  1. Cut jalapenos length-wise and scoop out seeds using a spoon or knife
  2. Cook bacon for 2-4 minutes (just to start rendering some of the fat off and make for crispier bacon once grilled)
  3. Combine cream cheese and pimento cheese, then fill jalapenos with cheese
  4. Optional, sprinkle some of your favorite grilling rub on the poppers before or after wrapping with bacon
  5. Wrap with 1/2 slice of bacon and secure with toothpick
  6. Place on preheated grill grate and cook for 2-3 minutes per side
  7. Add lid to Po Man and allow to cook for an additional 20 minutes.
