Ingredients
- 6 jalapenos
- 2 ounces of cream cheese (softened)
- 6 ounces of Pawley’s Island Pimento Cheese
- 6-8 slices of bacon
- Optional: favorite grilling rub
Directions:
- Cut jalapenos length-wise and scoop out seeds using a spoon or knife
- Cook bacon for 2-4 minutes (just to start rendering some of the fat off and make for crispier bacon once grilled)
- Combine cream cheese and pimento cheese, then fill jalapenos with cheese
- Optional, sprinkle some of your favorite grilling rub on the poppers before or after wrapping with bacon
- Wrap with 1/2 slice of bacon and secure with toothpick
- Place on preheated grill grate and cook for 2-3 minutes per side
- Add lid to Po Man and allow to cook for an additional 20 minutes.
