Beer Brats with Pepper and Onions

Ingredients

  • 6 Bratwurst Sausages
  • 1 12 oz Beer 
  • 1/2 sweet onion, sliced into strips
  • 1 red or orange bell pepper, sliced into strips
  • 1 T olive oil
  • 1 T butter
  • 6 Fresh baked bolillo (or similar style) bun

Directions

  1. Slice your peppers and onions and put them in a small cast iron skillet along with olive oil and butter.
  2. Place Brats into a pot on the stove and cover with beer of your choice. If there is additional beer left over, well, you know what to do with that.
  3. While you are taking care of your extra beer, get your Po Man started with the grill grate on level 3. ***Important – you want to leave the drip plate off for this recipe*** In order to get a nice crispy skin you want more direct heat.
  4. Bring beer to a boil and allow brats to slowly boil for 5-7 minutes.
  5. Put cast iron skillet on grill grate and stir pepper and onion mixture occasionally.
  6. Remove brats from  beer and place on grill grate, around your skillet.
  7. Grill, turning occasionally for about 15 minutes, until golden brown and the skin starts to split.
  8. Serve brats in a bolillo bun or similar style fresh baked bun that has a little tug. A soft bun will fall apart on you!
  9. Top with peppers and onions, mustard, and ketchup.
