Beef Tenderloin

Ingredients

  • Beef Tenderloin with extra fat and silver skin trimmed off
  • Olive Oil
  • Sea Salt
  • Coarse Black Pepper

Directions

  • Rub entire tenderloin with olive oil
  • Generously cover with sea salt and course black pepper
  • Place grate on level 2 or 3 of standing rack and place rack in Po Man for approximately 10 minutes, leaving a wide gap in the lid to allow grill and grate to get really hot.
  • Place entire tenderloin on grill grate, curving to fit, if needed. If you prefer more even cooking, cut the loin in half so you can pull the smaller end while it is still more rare. Otherwise, expect the smaller end to be more done than the larger end.
  • Add lid with a ¼ – ½ “ gap.
  • Cook for approximately an hour, flipping once during cooking. Cook until internal temp hits 125-135 degrees. Take out and allow to rest for 5 minutes before slicing.
